In case you own <a href=\"http:\/\/amzn.to\/1WmG072\" target=\"_blank\">a sleak ovenproof skillet like this<\/a>, this recipe will be your one-pot lunch wonder.<\/p>\n<p><strong>For 2-4 Servings<\/strong> (depending on your appetite :))<br \/>\n<strong>Prep Time: 30 minutes<\/strong><\/p>\n<p>\t1\/2 cup polenta<br \/>\n\t1 1\/2 cups of onion-free veggie or chicken broth (if you know German, I have a recipe in my <a href=\"https:\/\/fructopia.de\/en\/fructopia-das-kochbuch\/\" target=\"_blank\">cookbook<\/a> \ud83d\ude42<\/p>\n<p>\t1 small courgette\/zucchini, grated<br \/>\n\t4 large organic eggs<br \/>\n\t1 splash of (lactose-free) milk<br \/>\n\t1 Tbps soft, unsalted butter<br \/>\n\t1\/8 tsp freshly ground pepper<br \/>\n\t1\/8 tsp chili flakes (optional)<br \/>\n\t1\/8 tsp turmeric <\/p>\n<p>\t1 hand full of grated parmesan cheese<\/p>\n<p>Preheat oven to 180\u00b0 C.<\/p>\n<p>Add polenta and broth to your <a href=\"http:\/\/amzn.to\/1WmG072\" target=\"_blank\">ovenproof skillet<\/a> and cook for about 10 minutes until all the water is absorbed. If the broth evaporates too quickly, add some water. Stir occasionally, You don\u2019t want to burn the polenta. <\/p>\n<p>Meanwhile, in a bowl mix eggs, milk, butter and spices. Grate the zucchini (or other veggies). Add egg mix and courgette to cooked polenta and stir until just combined. Sprinkle parmesan on top.<\/p>\n<p>Bake for 10 to 20 minutes. Baking time depends heavily on thickness of your polenta and power of your oven. Keep an eye on it! The polenta frittata is done when the cheese is melted and the center of the frittata doesn\u2019t wiggle anymore. <\/p>\n<p>Enjoy straight from the oven or let cool down completely, storing it in the fridge until ready to use.
